SMOKE-EATERS!!

well if you haven't heard of smoke eaters then iunno what to say this spots been open for years in san jose and has one of the hottest wings ever!! there's a challenge called hellfire challenge. they make you sign a waiver and everything this restaurant has also been on the travel channel man vs food. he actually finished it and was crying for the most part. me and ryan have been talking about this place for a min. he has never been there yet but i have and never seen someone do the challenge yet...i hope to see someone do it soon im thinking i need to hit it up again.

ITS HOT ALL I WANT IS...

its hella hot had a great day!!bbq at the park, played football and cooked again. but now that i actually got home and took a shower all i can think about is this.
first i want a strawberry smoothie 
second i want a root beer float 
third roasted pineapple ice cream 
then!!! for the last i want a bucket i mean a bucket!!!chocolate malted crunch!!! please believe believe it please this is my shit!! these are pics i found and i really need a camera slr so i can take some savage pics like dashes clay peep his site out dashesclay.com,dashes pictures will blow your mind.i hate using my camera then having to photoshop like crazy to make it look different!! so instead of investing in new knifes kitchen stuff i think i need one in my life...

TROPICAL CHICKEN SALAD!!!

sorry no pictures ill post them ounce i make them another salad for all!!

servings:10-11 reduce the recipe by 3 to serve 3 or 4 people

ingredients:
-5 c. cooked chicken,(just salt pepper them grill or bake your choice) cut into chunks
-2 tbsp. salad oil
-2 tbsp. orange juice
-2 tbsp. vinegar
-1 tsp. salt
-3 c. cooked rice
-1 1/2 c. small green grapes
-1 1/2 c. celery, sliced, juliens(long cuts)
-1 (13 1/2oz.) can pineapple tibdits, drained approx. 1 c. 
-1(11oz) can mandarin oranges, drained approx. 1 c.
-1 c. toasted sliverd almonds
-1 1/2 c. mayonnaise or as needed 

directions:
combine chiken,salad oil, orange juice, vinegar and salt, let it sit for awhile. then prepare remaining salad ingredients. or you can refrigerate the mixture overnite. gently toss together all ingredients.BON APPITTE

SPINACH STRAWBERRY SALAD!!

its hot and all i really can think about eating is a fresh salad


ingredients:

-1 pkg.  fresh spinach
-1 basket. fresh strawberries 
-1/3 c. almond slices--toasted 

dressing:
-1/4 c. sugar
-2 tbsp. sesame seeds
-1 1/2 tsp. finely chopped onion 
-1 tbsp. poppy seeds
-1/4 tsp. worcestershire sauce
-1/2 tsp. paprika 
-1/2 c. veg. or olive oil
-1/4 c. apple cider vinegar or white wine vinegar 

directions:
to make dressing, put all the ingredients in a clean glass jar to shake. then refrigerate until you serve the dish. to toast almonds, bake in a preheated oven over 350 deg. on a pie plate for about 10 mins. until its golden brown. cool then store them in a glass jar. wash and dry spinach, remove stems, place in a pretty salad bowl. slice or quarter strawberries and add to spinach. when it is ready to serve to you and your friends drizzle dressing over the salad, toss, then sprinkle with the toasted almonds for that crunch!

try putting some of these in the salad as well fresh cucumbers, 1/2 c. shrimp, and even put cantaloupe it works def. my gammy used to actually do that with my salad i loved it! well BON APPITTE!!!

CINNAMON-ROLLS!!!

like pastries? try this one 

ingredients:
dough:
-3/4 c. warm water plus 2 tbsp. water 
-2 tbsp. butter
-2 1/2 c. bread flour
-1/4 c. granulated sugar
-1 tsp. salt
-1 tsp. bread machine live yeast 
filling:
-1/3 c. granulated sugar
-2 tsp. ground cinnamon 
-2 tbsp. butter (room temp. softened)
glaze:
-1 c. powdered sugar
-1/2 tsp. vanilla 
-2 tbsp. milk 

directions:
put the 3/4 c. watm water, 2 tbsp. water , 2 tbsp butter, bread flour,1/4 c. granulated sugar, salt and yeast and start on the dough cycle. when dough is done, roll it with a rolling pin into 9" squares. in a measuring cup mix the cinnamon and granulated sugar. spread the 2 tbsp butter on top of the dough then sprinkle the cinnamon and sugar mixture. roll the dough tightly. then cut the dough 1" slices and place on a none stick pan or pan with light butter on it so it wont stick.(always grease it tho very lightly) cover the dough in plastic wrap and let it rise for a hour. ounce done take plastic wrap off and place in a 350 degree oven for 20 mins. while its cooking away in its goodness take a bowl mix together the powdered sugar,vanilla and milk then drizzle over the buns when done! BON APPITTE!!

LA TRIP!

so me and rtudda took a trip to LA a week ago to check out some schools,well please believe believe it please we had to hit up a carne asada fries!!
this made my day 
5 hour energys kept us awake for the trip
there was 3 schools we hit up i didn't take many pics for the fact
i was tired but when i got another 5 hour in my system i just had to.

ORANGE CHICKEN!!!

feeling hungry try this recipe one time one time
servings 3 - 4 

ingredients:

chicken:
-2 lbs boneless skinless chicken breasts (cut into 1-1/2" cubes)
-1 1/2 cups all purpose flour 
-1 egg (beaten)
-1/4 tsp salt
-1/4 tsp pepper 
-oil for frying
orange sauce:
-1 1/2 c. water
-2 tbsp orange juice
-1/4 c. rice vinegar
-2 1/2 tablespoon soy sauce
-1 tbsp. orange zest(grated)
-1 c. packed brown sugar
-1/2 tsp. ginger root (minced)
-1/2 tsp. garlic (minced)
-2 bell peppers cut long wise 
-1/4 teaspoon red pepper flakes
-3 tbsp. cornstarch 
-2 tbsp. water

instructions:
combine flour,salt, and pepper. dip chicken in egg mixture and shake in flour mix to coat. deep fry chicken in batches at 375 degrees in a deep fryer (or use a wok) until completely cooked.meanwhile in a large sauce pan combine 1 1/2 c. water, lemon juice, orange juice, rice vinegar, and soy sauce.blend well over medium heat for a few minutes. stir in brown sugar, orange zest, garlic,ginger and bring to a boil. combine 3 tbsp of cornstarch with 1/4 c. water and mix thoroughly. slowly stir cornstarch mixture into sauce. until it thickens. pour sauce over  breaded chicken, and if desired add the pepper flakes and cook the bell peppers and add then enjoy. BON APPITTE!!!!

ON THE ROCKS!!

so when your at the bar and you ask for something on the rocks you would never think its really rocks?one of my old chefs emailed me the other day and was telling me to come by and try something new at the bar and when i got there i didn't believe it would be rocks? i was laughing at first but then he started to explain everything to me and well its amazing. there 
eco-friendly and they don't melt duh haha and you can re-use them plus there cheap. or maybe use the rocks in your backyard they should work the same and just throw them in your freezer.

PROSCIUTTO WRAPPED ASPARAGUS!!

easy recipe to cook for appetizers 

serving: 4

ingredients:
-1/2 pound prosciutto sliced
-1/2 (8 ounce) package neufchatel cheese, softened 
-12 spears of fresh asparagus, trimmed
-1 tbsp oil 
-pepper/salt

directions:
first oil and s/p the asparagus grill on high heat until crust then take off and let it cool down.
spread the prosicutto slices with neufchatel cheese. wrap slices around 2-3 asparagus spears. arrange the wrapped spears in a single layer on medium in the oven for about 10 mins.BON APPITTE!!!

BACON WRAPPED SCALLOPS!!!

so if you like scallops and bacon...hmmm well if your throwing a party try
this for a appetizer and if you never had a scallop you better make this!!
this is a super super easy recipe if you want to make it more just double it 

serving: 5 

ingredients:

-1 tbsp olive oil 
-10 uncooked scallops, halved 
-10 bacon strips 
- tooth picks 
-salt and pepper to season 
-lemon wedges 

directions: 
wrap bacon over scallop and secure with a toothpick. coat with the oil s/p place it on a baking sheet or a broiler pan. cook it 6 mins on each side until bacon is crispy then squeeze lemon over each then serve immediately. see super easy!!!!but if you wanna get fancy try putting spinach around the scallop then the bacon thats also awsome i had so spinach so oh well but BON APPITTE!!!

HONEY WALNUT PRAWNS!!

who doesn't love this i learned this recipe in my asian 
class from culinary a few years back
but looked it up had to cook it up enjoy try it cooking is fun

serving: 6 

ingredients:

-1/2 c. walnuts
-1/2 c. sugar
-2 c. oil
-1 lb jumbo prawns, peeled and deveined (cut on the back and pull the vein out)
-1/2 c. cornstarch
-3 egg whites
-1/4 c. honey 
-3 tbsp. mayonnaise
-1 tbsp. lemon juice or white vinegar 
-1 tbsp. sweetened condensed milk 

directions:

boil walnuts in 5 cups of water for 10 mins. then drain. place walnuts and 1/2 cup sugar  into 2 pints of boiling water  for another 10 mins. remove the walnuts from the water and coat with honey. heat 2 cups of oil until almost smoking then fry walnuts until they are shiny and brown this would take about 5-8 mins. remove and place of a cooling sheet or a cookie sheet. mix the cornstarch and egg whites together to form a think and sticky mixture. mix shrimp into this mixture and set aside. mix mayonnaise,leon juice and condensed milk in a medium bowl until smooth. heat 1/2 cup of oil and deep fry shrimp until golden brown (dont put all the shrimp put about 5 to 6 so they wont stick together) drain shrimp and then fold into the mayonnaise sauce then!!!! eat it up!!BON APPITTE

CRISPY LEMON FISH FILLETS!!

i am a huge seafood person and whenever its hot i just want fish and chips
or any dish that has seafood so heres my recipe for crispy fish fillets

servings: 4 

ingredients:
-2 c. french fried onions
-1 1/2 c. panko crumbs 
-3/4 tsp. grated lemon zest
-3/4 tsp. garlic powder
-3/4 tsp. paprika 
-1/2 c. flower
-4 (1/2 inch think) flounder,tilapia or red snapper fillets make sure you split them lengthwise if to big 
-3 egg whites beaten mix with tsp of water

direction:
place french onions,panko, lemon zest,garlic and paprika is a bad shake bag to combine flavors.
place the flour in another plastic bad, add fillets shake to coat the fish. dip the fish into the egg whites then into the onion panko crumbs mixture then place on a baking sheet. bake at 400 degrees F for 13-15 mins until fish is flakes then cut into it and enjoy!!BON APPITTE!!
